the estate has been cultivated according to the methods of organic agriculture. In order for the wine to maintain its genuine quality and perfume, intervention on the grapes and wine are kept to a minimum. This begins with a pruning policy which reduces the average yield to just 50hl/hectare. During harvest, in order to avoid bruising the fruit, grapes are collected by hand in small crates. In the cellar, the vinification is conducted with accurate control of temperature and oxidation.
